Sometimes I think more about the soup I can make after the holidays with a leftover ham bone than I think about the ham dinner itself! Ham and Bean Soup Recipe

Nick was at it again with the smoker last weekend!  This time he chose to smoke a bone in ham, with hickory and apple wood chips.

The ham, like the Whiskey Apple Smoked Pork, didn’t last long.  But what was leftover, was a nice ham bone perfect for soup!

Ingredients

1 ham bone

2 large russet potatoes

1 medium onion

4 cloves garlic, crushed

a 1 lb bag of dried bean medley

1 teaspoon thyme

1 teaspoon oregano

salt & pepper to taste

water

Directions

Soak your dried beans overnight.

Drain and rinse them in the morning.

Add your ham bone to a 6.5 quart dutch oven.

Peel and dice potatoes and onion and add to the pot.

Crush garlic into the pot.

Add beans, herbs, salt and pepper.

Completely cover with water and allow it to cook down over medium low heat all day.

Remove the bones and serve with a side of crusty bread!
