Garden Fresh Coleslaw With Tri-Colored Carrots
This morning when I went out to the garden, I started by checking on my carrots. Sadly, the few that I decided to pull, had been planted a bit too closely and were wrapped around each other.

This lead to much digging, much damage, and much swearing (yes I was swearing, damaged carrots make me angry). I always share carrots with my pretty girl Layla, but this was getting excessive!
When I brought my sad bounty in, I remembered that the previous day I had harvested a beautiful small head of cabbage that I had been debating on how to prepare. I decided to try my hand at coleslaw and it turned out pretty darn good, if I do say so myself!
Ingredients
1 small head of cabbage
8-10 medium carrots (purple, red and orange!)
1 green onion
1 cup mayonnaise
1/4 cup apple cider vinegar, with the mother
1 1/2 Tbsp sugar
1 tsp sea salt
Directions
Chop your cabbage head as you prefer. I like it rough cut.
Julienne your carrots (I would rough cut these as well, but Nick doesn’t like “when the carrots keep crunching forever”).
Chop your green onion and toss these ingredients together.
Mix the remaining ingredients and toss to coat your veggies. Perfection!
This coleslaw is amazing on top of Whiskey Apple Smoked Pork!
