Guilty as charged.  I have been known to throw boxed macaroni and cheese on the table for dinner.

Don’t judge!  I judge myself enough for it!  It is awful, it does not taste good and I feel horrible about myself afterwards.

The worst part is, I have a DELICIOUS and EASY recipe that my family loves.  So I’ve made a promise to myself.

That boxed junk will not be entering this home again!  I will make my macaroni and in turn make my family happy!

Here’s How We Make It!

Ingredients

2 cups dry macaroni

4 Tablespoons butter

4 Tablespoons flour

salt and pepper to taste

1 teaspoon dry mustard

2 cups milk

1 egg

2 1/2 cups shredded sharp cheddar

3/4 cup Italian seasoned Panko bread crumbs

 

The Process

Preheat the oven to 350°F.

Boil your macaroni al dente.

Next, melt your butter in a medium saucepan.  Add the flour, salt, pepper, and dry mustard and combine to make a roux.

Gradually add your milk, whisking in.  Cook on medium heat, whisking until thickened.

Whisk an egg in a small dish.  Take 2 tablespoons of the sauce and whisk it into the egg.  (This is called tempering, and will keep the egg from curdling as it would if you added it right in.)

Now, whisk that mixture back into the sauce.

Stir in 2 cups of sharp cheddar cheese.

Put the macaroni in a 9 inch baking dish and pour the cheese sauce over top, evenly.

Sprinkle the remaining 1/2 cup of cheese on top.  Then sprinkle the bread crumbs over the cheese.

Bake uncovered for 30 minutes.

See!  Seriously, I had no excuse for boxed macaroni and now I hope you’ll feel the same!

It is amazing served as a side with just about anything.  (Try it with Homemade Chicken Tenders!!)  Or as lunch, or a snack, or breakfast.  (Don’t judge me! Carbs and cheese are my weaknesses!)
