The Perfect Roast Chicken

Everyone needs a good roast chicken recipe. Beyond being beautiful on your table served next to comfort foods like roasted vegetables, preferably from your harvest, and mashed potatoes, you can break these birds down to use the shredded chicken for an endless number of meals. My personal favorite is Chicken and Biscuits!

We like using the shredded chicken. But we also use the drippings for the gravy as well as the leftover parts to make Chicken Stock, also used in gravy or for soups!

Having the perfect roast chicken recipe in your recipe box is a must! And this recipe is just that! Perfect every time and the chicken is great for dinner with a few sides or shredded and used in salads, casseroles and more! #roastchicken #chickenrecipe #dinner #fromscratch #achickandhergarden

You may have your own way of roasting a chicken but here is my tried and true way of creating the Perfect Roast Chicken!


Ingredients

1 whole roaster chicken

1 medium onion

1 lemon

2-3 Tbsp Olive Oil

1 Tbsp thyme

Salt

Pepper

 

 

Directions

  1. Preheat the oven to 400°F.
  2. Quarter the onion and lemon and insert into the cavity.
  3. Create a paste with the remaining ingredients and use your hand to rub this paste in between the skin and meat, and also a bit over the skin.
  4. Place in a covered roasting pan and roast for 70 minutes covered.

 

 

 

This chicken will fall off the bone! Save the bones and everything left to make an amazing stock afterwards. Below you can find a printable version of this recipe.
