This winter was rough on me! While the weather itself wasn’t that bad, I did get into a serious slump!
I stuck to the same old, same old in the kitchen, I found it hard to come up with new ideas for crafting, and I even stopped listening to music!
If you know me personally, you know that music was always a big part of my life.
Whenever I clean I hear my mom say, “Just crank some music and get it done!” Even that stopped.
So, maybe it was the windows open today that prompted me to turn on the music. But when I did it was magical!
Maybe someone knew I needed it, but every song that popped out was something that reminded me of a happy time in my past.

There was Love Shack that reminds me of my Aunt Kathy, who I lost about 10 years ago and was an insanely influential person in my life. Maggie Mae by Rod Stewart, which reminds me of finding my Puggle Maggie, a week after Aunt Kathy passed, while living in Colorado. And an all time favorite band, Donna The Buffalo, that reminded me of dancing in the sun at music festivals every summer.

With the music, came back my creativity!
I took a trip to the grocery store, to get some ginger to try my hand at homemade ginger ale. I found a sale on London Broil and got the idea for a fresh new dinner! Check out my London Broil recipe!
Pan Seared London Broil Recipe
With Ginger Vegetables Over Rice Noodles
Ingredients
2-3 lb London Broil
Rice noodles
Marinade
1/2 cup canola oil
1/4 cup soy sauce
1/4 cup red wine vinegar
1 Tbls fresh grated ginger
1 clove garlic
Vegetables
1 green pepper sliced
2-3 carrots sliced into sticks
1 medium onion sliced
1 inch of ginger peeled and sliced
Directions
- Combine the marinade ingredients and pour over London Broil in a dish or gallon freezer bag.
- Allow it to marinate for at least 2 hours or over night.
- Heat a large cast iron skillet on medium high with some olive or canola oil.
- Place the meat in your pan and reserve the marinade.
- Sear on each side and cook to desired temp. (I like it rare to medium rare.)
- Start your rice noodles while the meat is cooking.
- In a separate pan toss your veggies with some of the marinade, at medium temp.
- Remove the meat and cover with tin foil to rest while cooking the veggies.
- When the vegetables are ready, lower the heat and slice the London Broil into strips.
- Serve the veggies and meat over a bed of rice noodles, and smile!
Hubby is not the biggest fan of Asian inspired food, but this one won him over so I know it’s a keeper!
